My go-to with salmon that's basic and easy is some sort of soy sauce glaze. Soy sauce + some sort of sweetener (maple syrup, honey, etc.) goes wonderfully on salmon. Just don't use plain white sugar, it doesn't work. The sweetener needs to thicken the soy sauce to properly make a glaze. Other than that... A simple garlic butter also goes a long way with salmon. But I really like garlic, so YMMV.
If you're feeling a bit saucy (heh) you could always just make a generic curry sauce and cook the salmon in it. Or just curry the salmon in general! Cumin, coriander, tumeric, heck, you could even throw on garam masala. A lot of Indian spices pair very well even just directly on the salmon.
That's all the super easy stuff I have off the top of my head. I hope this gives you some ideas!
Yeah, just plain salmon with skin, since i prefer my food as simple as possible.
And thank you for the suggestion. Soy sauce isn't the most common thing where i live, but i am sure i can find some if i look enough.

Traditional Easter Roast
At least that's what it said on the label. I didn't follow any particular recipe. I just boiled it in a pot and then popped it in the oven for an hour together with soup greens and gravy.
And here's the final product:
I was full after just those two slices. I'm gonna eat away at that roast for the next few days!

Gnocchi casserole with creamy tomato sauce
Ingredients for about four people:
➢ 500 gr gnocchi
➢ ± 300 to 400 ml passata
➢ 100 gr mascarpone
➢ 1 zucchini
➢ 250 gr chestnut mushrooms
➢ 300 gr (chipolata) sausages or chicken
➢ 3 sprigs of fresh basil (or 1 tbsp dried)
➢ 3 sprigs fresh oregano (or 1 tbsp dried)
➢ 1 mozzarella ball
➢ 1 grated parmesan cheese
➢ 1/2 tea spoon sugar
➢ Salt and pepper to taste
➢ A few cloves of garlicRecipe:
Preheat the oven to 200 degrees Celsius.Cut the courgette into cubes and the mushrooms into slices.
Heat a large pan with a thick base, put in some oil or butter and fry the sausage for a few minutes until done. Chop the sausage into pieces with a spatula while frying.
Add the vegetables and fry for 5 minutes on medium to high heat until the vegetables have shrunk and are almost done.
Add the passata & mascarpone and mix well. Season with sugar, salt and pepper and let everything cook for 5 to 10 minutes until the vegetables are al dente. Chop the herbs finely and add this to your sauce.
In the meantime, bring a large pan of water to the boil and cook the gnocchi until they float to the top. Make sure you cook them when your sauce is almost ready because gnocchi cook very quickly. Drain or remove them with a skimmer and add the gnocchi to the pan with sauce.
Stir well and scoop everything into an oven dish. Slice the mozzarella and spread it over the top of the sauce. Garnish the top with some Parmesan cheese and bake everything in the oven for 25 minutes.
You can also prepare this dish a bit in advance and put the dish in the fridge before putting it in the oven, it just needs to be in the oven longer to get warm.
Then enjoy :)
Made some leek and potato soup!
I may have seasoned it a bit much fir the leeks to shine through, but I think it'll be fine when reheated, and I'm making this for later in the week anyway
I made some stuffed potatoes with bacon, cheese, chives and soured cream last month!
They were so incredibly delicious...
Salmon Teriyaki out the oven with roasted vegetables and rice.
I do meal prep now and then and this one is pretty good, i only need to let it thaw and throw it into the microwave and it is ready to eat, very handy.
I made Mapo Tofu
Last week @Viviennergized and I were watching an anime where one of the characters likes mapo tofu. It looked tasty so I said I'd try making it and here we are:
I followed this recipe as best I could. Even though I left out the chili flakes it still turned out a little too spicy for me, but otherwise it's really good.

Salmon teriyaki with vegetables and rice (4 to 6 portions):
This recipie asumes you are doing meal prep but of cource you can just eat parts or all of it while it is freshly cooked as well. Perosnally I make quite a bit, freeze most and then take portions to work to heat in the micorwave and eat as lunch.

Kitchen utensils:
1 Small pan
1 Garlic press
1 Metal oven dish (glass works as well but less good)
1-2 Baking trays (if only one than you need to do it twice)
4-6 Medium sized freezer and microwave safe containers
Main Ingredients:
600g Salmon without skin (or chicken)
500g Rice to boil
1,5/2kg Pre-cut freezer vegetables
30/40g Olive oil
Ingredients for the teriyaki sauce:
200g Soy sauce
6 toes Garlic (I like garlic)
25g Honey
25g Brown sugar
~15g Cornstarch
~15g Water
...
Preparation:
Prepare the rice
- Boil the rice according to the instructions on the race packet.
- If water remains pour the remainder off
- Let the rice cool, personally I spread the rice over a large surface (oven parchment works well) to cool it reasonably quickly
- Start oven preheat on 200 Celsius air circulating
(This is for the salmon and the vegetables)
Prepare the teriyaki sauce
(You can also just buy the sauce but this works as well)
- Mix the Soy sauce, Honey and brown sugar in a small pan.
- Crush the garlic into the pan with a garlic press (or cut tiny pieces)
- Mix the Cornstarch with the water in a separate bowl until no clumps remain.
- Add the mixture into the small pan.
- Heat the sauce mixture until it has thickened somewhat
(If it really does not what to thicken mix some more cornstarch and water and add that to the pan) - Let the sauce cool for 5 minutes or so.
Bake the salmon
- Use some kitchen paper to dab the salmon dry somewhat.
- Put some of the teriyaki in the oven dish, put the salmon in and cover it with the rest of the teriyaki sauce.
- Bake the salmon in teriyaki for about 20 minutes at 200 Celsius
- Take it out of the oven, let it cool on the side.
Bake the vegetables
- Get the frozen pre-cut vegetables from the freezer and put it into a large bowl.
- Drizzle the olive oil over the vegetables and mix it up.
- Cover the baking trays in oven parchment paper.
- Distribute the vegetables over the baking trays.
- Put the baking trays in the oven and bake until the vegetables are ready to eat
(sorry no specific time frame, depends on size of cuts and other stuff) - Turn off the oven, take the baking trays out of the oven and let them cool
Putting things together
- Divide the cooled rice over the containers.
- Divide the cooled vegetables over the containers
- Divide the cooled salmon over the containers
- Divide the remaining sauce over the containers as well
...
Storage and prep for eating:
- You can put the sealed containers in the freezer and store them for quite a while
- Before eating let a container thaw and them heat it up in a microwave
- Enjoy your meal
