Am sick, so i am happy i got to enjoy some simple comfort food.
Its a really basic dish really, but sometimes simple is best.
spaghetti squash filled with onions and peanut butter, rice on the side.
quick and easy preparation, throw it into the oven for an hour or so, get lost in a wikipedia rabbit hole, have something hearty and warm to eat (and then more wikipedia :D ).
i think i might be addicted to peanut butter though,, it's so good on so many things or just by itself,,, ':3
I made creamy walnut sauce with spaghetti
- First i ground 150g of walnuts about as finely as i'm patient with a mortar and pestle
- Then i lightly fried /roasted them in a small pan with olive oil, oregano, thyme and salt (salt can go in at pretty much any point though, the timing isn't very important with this recipe)
- Then i added ~250g of heavy cream + 1 or 2 garlic cloves (crushed with the garlic-crushing thingamajig) into the pan and let it reduce until it's almost as thick as yogurt
- Before mixing it with spaghetti on the plate /bowl i add some more olive oil because i like how that tastes, also since the sauce is pretty thick /filling you don't need a lot of sauce per pasta, i just put enough to coat the pasta
- I live alone and this will feed me for days (i'm very lazy), so adjustments to the amount are recommended
PS: I wrote heavy cream but i'm not sure that's the right translation, in german it's Schlagrahm (32% fat), if you use a different type of cream you might need to use more, reduce it for longer or dilute it with water /pasta water, this part is mainly about getting the consistency right so most types of cream should work but the amount would probably be off with other types
