This is the Tandoori Chicken I made today! Looks nice, but I'm not entirely sure if I got the spice blend to my liking. We'll see in a few! I'll edit this post once I have some.
Edit: I continue to be surprised at just how long chicken takes to cook. These are cooked to the proper temperature, but they're still a bit more juicy than I expected. Flavor wise, My fears from the preparation phase were confirmed, I didn't put enough masala on them. So the flavor is good, just a little muted. Tandoori chicken is meant to be done in a clay furnace or at least a charcoal grill, so doing it under a broiler/grill you definitely feel the lack of grill flavor.
Oh well. Still pretty good though!
If anyone's curious and wants to try it out themselves, here's the recipe.
Edit to the edit: Totally forgot I was supposed to slightly cook the vegetables. I was sitting here wondering why the recipe called for eating raw onion as a side, LOL. It's much better with the veggies cooked, unsurprisingly.

And the follow up, chicken tika masala. This was delicious and I would love to make it again. REALLY savory and at just the right spice level for me.

This beet pasta is freaking delicious. I thought it was pasta made from beets at first lol but it's actually a from scratch beet sauce
I used:
(a food processor or a blender is a must for dishes that go for a smoother texture like this one)
~ 1 pound beets, half a kilo would probably also work
If you have fresh beets I recommend boiling and peeling them for about 35 minutes in salted boiling water, I had a pre-cooked package so I skipped this step and just cut them up into palatable chunks for the food processor

  • half a cup, about 4 ounces of cashews, boil for about 15 minutes (so if you have the beets boiling, you can add them in there)
  • remove the beets and/or cashews from the water and put in food processor
  • Add pasta to water, cook pasta to desired doneness
  • Add feta cheese (also about half a cup) or "one package silken tofu", garlic cloves (2-3 of them), italian seasoning, salt, pepper, chili flakes, some lemon juice (the feta's already kinda tart so don't go too crazy), some olive oil (about 2 tbsp or 30ml), and about half a cup or 120ml of the pasta water, so don't pour it all down the drain
  • blend until smooth and top with ricotta and pistachios if desired

This feels really healthy and those prepackaged beets are pretty easy to come by in my grocery, I might make this a mainstay recipe because the sauce kinda counteracts the relative plainness (in terms of nutrient profile) of the pasta

On request from a special someone I will now share my dinner with you.

It's called Toast Hawaii and it is, I would argue, a cornerstone of German low-effort cuisine.

You start with sliced bread and add some butter for flavor.

Next you add a layer of ham.

And then some fruit as the main ingredient. The traditional Toast Hawaii is made with pineapple slices, hence the name, but personally I prefer tomatoes. Tonight I opted for both because I'm a rascal.

Lastly you cover everything with cheese. The traditional recipe also calls for a cherry on top, but I don't have any.

Next you're supposed to toast it, hence the name, in a toaster oven. But I don't have one, and also I'm lazy, so usually I just microwave it.
